  • These times assume a covered pot with braising liquid — the traditional pot roast. Dry-roasted chuck at these temperatures will not tenderise the same way.
  • The stall is real: the internal temperature can sit in the 150s–160s for an hour while moisture evaporates. It is physics, not a broken thermometer.
  • Fork-tender is the finish line — if the fork twists out cleanly, it is done regardless of what the clock says.
  • It is very hard to overcook a braised chuck roast and very easy to undercook one. When in doubt, another 30 minutes.
