How this is worked out

  1. Anchor. Start from what USDA FSIS publishes for a fully cooked bone-in ham — its safe minimum internal temperature of 140°F, and the FSIS roasting timetable where one exists for this cut.
  2. Rate. Convert the anchor into a planning rate at 325°F: 15–18 min/lb, cross-checked against at least three independently published sources.
  3. Scale. Multiply that rate by your weight. A 10 lb piece lands at 2 hr 30 min – 3 hr; the range is widened to cover source disagreement rather than averaged into false precision.

  • Check the label first: 'fully cooked' reheats to 140°F; 'cook before eating' must reach 145°F like fresh pork.
  • Add the glaze in the last 20–30 minutes at a raised 400°F — brown sugar burns over a 2-hour reheat.
  • A spiral-cut ham dries out faster; reheat it covered with foil and a splash of liquid in the pan, at the low end of the range.
